This potato stuffed with eggs add a little flair to the ordinary potatoes and are absolutely delicious. Enjoy it as a snack or a meal.
- Baking Potatoes 2 Large
- Salsa ½ Cup
- Eggs 4
- Grated Cheese ½ cup
- Salt & pepper to taste

Wash the potatoes well. They drill with a fork and wrap them in aluminum foil. Fry potatoes from the 400F preheated oven for 50-60 minutes or until very soft when pricking with a fork. Once done, remove the potatoes from the oven, remove the foil and let cool for about 10 minutes.
Once the potatoes are lukewarm, cut them in half along the length. Scoop the flesh leaving about ⅓ inch of flesh and skin. Put the meat in a bowl. Salsa (and cheese if desired), add to bowl and mix well.
Place the potato shells on a baking sheet with foil or parchment paper. Fill Potato with (Salsa + Potato) mixture. Press the filling firmly and make a small clod of earth in the middle. Break an egg on the grass.
Cook the potatoes baked 400F for 20-25 minutes or until the eggs. Depending on your preferences, you can wait until both the white and the yellow of the egg is cooked, remove or the oven potatoes for the yellow is completely set.
remove from oven and than add salt and freshly ground pepper to taste.
